Sweet and smoky ribs

The slow cooking of these ribs makes them melt in the mouth.

Serves 4

Ingredients:

1 whole large rack of pork ribs

2 tablespoons of Waitrose Cook’s ingredients Smokey Steak rub

3/4 pint cold water

4 tablespoons of runny honey

1 tablespoon of Worcester sauce

2 tablespoons of brown sauce

2 tablespoons tomato ketchup

Juice of one whole orange

1 teaspoon of garlic salt.

Method:

Sprinkle the Smokey rub over both sides of the meat. Using your fingers, rub in well. Cover and leave to marinate in the fridge for 2 hours or preferably overnight.

When ready to cook, heat the oven to 160°c/320°f, gas mark 3.

Transfer the ribs to a large ovenproof dish and place on a rack. Pour the water into the bottom of the pan, then cover the dish with foil. Cook for around 1 hour and 30 minutes.

Mix all remaining ingredients together in a bowl. Pour over the ribs ensuring they are thoroughly coated.

Replace the foil then continue to cook for a further 20 minutes. If the sauce runs dry, add a little water to the dish and mix through then baste the ribs.

When cooked, leave to rest for around 10 minutes before serving.

Serve with Red cabbage slaw (see recipe).
